Sara Kate gives such a great tour through Old Town. She is a wealth of knowledge and has great stories to contextualize the history that surrounds you in Valencia. This isn’t just a tour of the market, you walk around several sites throughout Old Town, all of which are beautiful.
This was a great way to get oriented with the centre of town and Josep was a fun guide - full of little details and stories. I’d recommend making time for this tour to anyone new in town, as a way to get a basic understanding of the city’s geography and history.

The tour of the UNESCO site Lonja de la Seda in the Market Square is unlike any other you can find, as is the tour of the Roman ruins museum under the city! Make sure to take part in trying Spanish Horchata "Orxata" and Fartons!
